The use of locally produced Welsh pigs and curing on site not only lets us call it completely Welsh, but also allows us to control it's taste. this means we can produce a very tasty bacon which isn't too salty and will not shrink in the pan.... By using Pembrokshire Sea salt we can rather than the usual curing salts/methods we can guarantee that only naturally occurring nitrates  are present in this bacon. This is deemed as nitrate free (to a degree). you wont find any E's here!
